  • 1/2 tsp Salt Adds flavor to the crust.
  • 1/2 cup Unsalted Butter Melted, adds richness to the crust.
For the filling
  • 3 Large Eggs Acts as a binder for the bars.
  • 1/2 cup Heavy Cream Adds creaminess to the filling.
  • 2 tsp Vanilla Extract Enhances overall flavor.
  • 3/4 cup Erythritol More for the filling, maintaining sweetness.
  • 1 cup Pecans Chopped, for the signature taste and crunch.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a large mixing bowl, combine almond flour, erythritol, and salt. Melt the butter and mix it with the dry ingredients until you achieve a crumbly dough consistency.
  3. Press the mixture evenly into the bottom of the greased baking dish to form the crust.
Baking the Crust
  1. Place the crust in the oven for about 10-12 minutes, or until it starts to turn a golden brown.
Making the Filling
  1. While the crust bakes, whisk together the eggs, heavy cream, vanilla extract, and additional erythritol in a separate bowl.
  2. Fold in the chopped pecans until they are evenly coated.
Combining
  1. Pour the pecan filling over the pre-baked crust, spreading it evenly.
Final Baking
  1. Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling has set and slightly puffed up.
Cooling and Slicing
  1. After baking, remove from the oven and allow the bars to cool completely in the dish before slicing.

Notes

For an added layer of flavor, toast the pecans lightly before mixing them into the filling. To avoid overbaking, consider reducing the baking time slightly for a creamier filling.
