Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cottage cheese, eggs, chopped bacon, salt, and pepper until well combined.
- Grease a muffin tin.
- Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Optional: add shredded cheese or vegetables on top.
Baking
- Bake for 20-25 minutes, or until the egg bites are set and slightly golden.
- Let cool slightly before removing from the muffin tin.
Notes
Cool bites on a rack at room temperature before storing. Refrigerate in an airtight container for up to 4 days or freeze for up to 3 months.
