  • 6 large large eggs Use room temperature for better mixing
  • 1/2 cup cream cheese Softened for easy mixing
  • 1/4 cup shredded cheese Cheddar or your choice
  • 1/4 cup milk Almond milk can be used for lower carbs
  • to taste Salt and pepper Adjust according to preference
Optional Mix-ins
  • Cooked bacon Chopped or crumbled
  • Spinach Chopped small
  • Bell peppers Chopped small
  • Fresh herbs Such as parsley or chives

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, cream cheese, and milk until smooth.
  3. Stir in the shredded cheese and any optional mix-ins.
  4. Season with salt and pepper to taste.
  5. Pour the mixture into greased silicone molds or a muffin tin.
Baking
  1. Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  2. Allow to cool for a few minutes before removing from the mold.
  3. Enjoy warm or store for later.

Notes

Let the bites cool completely before storing in an airtight container. They can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat as needed.
