Ingredients

  • 2 cups almond flour Spoon into the cup and level off to avoid dense biscuits.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup butter, melted Let it cool slightly before adding.
  • 1 large egg Don’t overmix once added.
Mix-Ins
  • 1/2 cup shredded cheese (cheddar or mozzarella) Use sharp cheddar for bold flavor.
  • 1/2 cup diced ham Can be swapped for cooked bacon or chicken.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the almond flour, baking powder, and salt.
  3. Add the melted butter and egg to the dry ingredients, and stir until well combined.
  4. Fold in the shredded cheese and diced ham carefully.
  5. Form the mixture into small balls and place them on the prepared baking sheet, spaced apart.
Baking
  1. Bake for 15-20 minutes or until the biscuits are golden brown.
  2. Let cool slightly before serving.

Notes

These biscuits pair well with scrambled eggs and avocado. For kids, smear with cream cheese or butter; adults might enjoy hot sauce or sour cream. Store in an airtight container for up to 4 days or freeze for up to 2 months.
