Ingredients
  

For the Bars
  • 1/2 cup butter, softened Use room temperature for easier mixing.
  • 2/3 cup Swerve Granular
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 2 cups almond flour Make sure it's finely ground.
  • 1.5 tsp baking powder
  • 1/4 tsp salt
For the Frosting
  • 1/2 cup butter, softened Use room temperature for smooth frosting.
  • 3 ounces cream cheese, softened
  • 3/4 cup Swerve Confectioners
  • 1/2 tsp vanilla extract
  • Sugar-Free Sprinkles Optional, for decoration.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Soften the butter and cream cheese.
  3. In a mixing bowl, blend the softened butter and cream cheese until smooth.
  4. Add in Swerve Granular, egg, egg yolk, and vanilla extract; mix until fluffy.
  5. In another bowl, combine almond flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing to avoid lumps.
  7. Press the dough evenly into a greased 8x8 inch baking pan.
Baking
  1. Bake in preheated oven for 20-25 minutes until the edges are set but the center is still tender.
  2. Allow the bars to cool completely in the pan.
Frosting
  1. Once cooled, prepare the frosting by mixing the softened butter, cream cheese, Swerve Confectioners, and vanilla extract until smooth.
  2. Spread the frosting evenly over the cooled bars.
  3. Top with sugar-free sprinkles if desired.
  4. For clean slices, chill the bars briefly before cutting.

Notes

Store leftover bars in an airtight container in the refrigerator for up to 5 days. These bars can be frozen for up to 3 months.
