  • 8 slices sandwich bread (crusts optional, flattened with a rolling pin) Day-old bread works great.
  • 8 links breakfast sausage (cooked)
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon granulated sugar (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon butter or cooking oil (for frying) Use a non-stick skillet.
  • Maple syrup (for serving) For dipping.

Method
 

Preparation
  1. Cook the breakfast sausage links according to package directions until browned and cooked through. Set aside.
  2. In a shallow dish, whisk together the eggs, milk, optional sugar, and optional cinnamon until well combined.
  3. Take each slice of flattened bread and place a cooked sausage link at one end. Roll the bread tightly around the sausage.
  4. Dip each sausage roll-up into the egg mixture, ensuring all sides are coated.
Cooking
  1. Heat butter or oil in a large non-stick skillet over medium heat.
  2. Place the roll-ups in the hot skillet, seam-side down first, and cook for 2-3 minutes per side, or until golden brown and cooked through.
  3. Serve warm with maple syrup for dipping.

Notes

Cool any leftovers to room temperature, then place in an airtight container and refrigerate for up to 3 days. Reheat in a toaster oven or skillet.
