  • 6 large eggs Provides structure and protein.
  • 0.5 cup full-fat Greek yogurt, unsweetened and plain Adds moisture and richness.
  • 1 tablespoon baking powder, preferably aluminum-free Provides fluffiness.
  • 0.25 cup melted butter or coconut oil Adds richness.
  • 0.25 teaspoon salt Enhances overall flavor.
  • 0.5 teaspoon xanthan gum or psyllium husk powder Offers elasticity and structure.
  • 0.5 cup finely ground almond flour Adds nutty flavor, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Whisk the eggs until smooth.
  3. Fold in the yogurt and melted butter or coconut oil.
  4. Add baking powder, salt, and xanthan gum or psyllium husk to the mixture.
  5. Gently mix in the almond flour until the batter is even.
  6. Pour the batter into a greased loaf pan.
  7. Bake until golden and set, about 30 minutes.
  8. Let the loaf cool fully before slicing.

Notes

Use room-temperature eggs for better rise. Don’t overmix the dry ingredients.
