Preparation
- Preheat your oven to 350°F (175°C).
- Whisk the eggs until smooth.
- Fold in the yogurt and melted butter or coconut oil.
- Add baking powder, salt, and xanthan gum or psyllium husk to the mixture.
- Gently mix in the almond flour until the batter is even.
- Pour the batter into a greased loaf pan.
- Bake until golden and set, about 30 minutes.
- Let the loaf cool fully before slicing.
Notes
Use room-temperature eggs for better rise. Don’t overmix the dry ingredients.
