  • 4 cups shredded carrots You can use pre-shredded carrots for convenience.
  • 2 tablespoons sesame oil Replace with olive oil if desired.
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar Can substitute with a splash of lime juice.
  • 1 clove garlic, minced
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon red pepper flakes Adjust to taste for more heat.
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup chopped green onions For garnish.

Method
 

Preparation
  1. In a large bowl, combine the shredded carrots.
  2. In a separate bowl, whisk together the sesame oil, soy sauce, rice vinegar, minced garlic, honey or agave, and red pepper flakes.
  3. Pour the dressing over the carrots and toss until well coated.
  4. Sprinkle with toasted sesame seeds and chopped green onions.
  5. Serve immediately or refrigerate for 30 minutes to enhance the flavors.

Notes

To keep your salad fresh, store leftovers in an airtight container in the refrigerator and consume within a few days to maintain crunchiness. For quicker prep, keep dressing separate until ready to serve.
