Method
Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchinis into fry shapes, ensuring they’re all about the same size for even cooking.
- In a bowl, whisk together the egg whites and Cajun seasoning until well blended.
- In another bowl, combine the Parmesan cheese with the Cajun seasoning.
- Dip each zucchini fry into the egg mixture, allowing excess to drip off before coating it with the Parmesan mixture.
- Arrange the coated fries on the prepared baking sheet, ensuring they’re spaced out.
Baking
- Bake the zucchini fries for 15–20 minutes or until golden brown and crispy.
Optional Dipping Sauce
- Combine mayonnaise, heavy cream, lemon juice, Cajun seasoning, and beaten egg yolks in a small bowl.
- Whisk until well blended and set aside to use as a dipping sauce.
Notes
For best results, pat the sliced zucchinis dry with a paper towel before breading. Feel free to customize with different seasoning blends based on your preference.
