Ingredients
  

For the Zucchini Fries
  • 3 medium zucchinis Sliced into fry shapes
  • 2 large egg whites Mixed with 1 teaspoon Cajun seasoning
  • 1 cup Parmesan cheese Mixed with 1 tablespoon Cajun seasoning
  • 1/2 cup mayo
  • 2 tablespoons heavy cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Cajun seasoning
  • 2 large egg yolks Beaten

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into fry shapes, ensuring they’re all about the same size for even cooking.
  3. In a bowl, whisk together the egg whites and Cajun seasoning until well blended.
  4. In another bowl, combine the Parmesan cheese with the Cajun seasoning.
  5. Dip each zucchini fry into the egg mixture, allowing excess to drip off before coating it with the Parmesan mixture.
  6. Arrange the coated fries on the prepared baking sheet, ensuring they’re spaced out.
Baking
  1. Bake the zucchini fries for 15–20 minutes or until golden brown and crispy.
Optional Dipping Sauce
  1. Combine mayonnaise, heavy cream, lemon juice, Cajun seasoning, and beaten egg yolks in a small bowl.
  2. Whisk until well blended and set aside to use as a dipping sauce.

Notes

For best results, pat the sliced zucchinis dry with a paper towel before breading. Feel free to customize with different seasoning blends based on your preference.
