Preparation
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment.
- In a large bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, and salt until even.
- In a separate bowl, beat the eggs lightly. Add melted butter, sour cream, vanilla, and lemon zest; mix until smooth.
- Pour wet ingredients into dry ingredients and stir with a spatula until just combined. Do not overmix.
- Gently fold in the blueberries so they distribute without crushing.
- Transfer batter to the prepared pan and smooth the top.
Baking
- Bake for 40–50 minutes, or until the top is golden and a toothpick inserted near the center comes out mostly clean with a few moist crumbs.
- Cool in the pan for 10 minutes, then lift the loaf out using parchment and cool completely on a rack before slicing.
Notes
Serve slices at room temperature or lightly toasted. A smear of cream cheese, or a dollop of mascarpone pairs well without adding many carbs. Wrap tightly for storage and refrigerate for up to 7 days, or freeze for up to 3 months.
