Preparation
- Remove the cream cheese from the fridge and let it sit at room temperature for about 10–15 minutes to soften slightly.
- In a medium bowl, beat the softened cream cheese with powdered erythritol until smooth and creamy, about 1–2 minutes with a hand mixer.
- Add vanilla extract, lemon juice, and almond extract if using. Beat again until fully combined and smooth.
- In a separate bowl, whip the heavy cream to soft or stiff peaks, depending on how airy you want the fluff to be.
- Gently fold the whipped cream into the sweetened cream cheese mixture in two additions. Fold until you reach a light, uniform texture without overmixing.
- Taste and adjust sweetness with a little more erythritol if needed.
Serving
- Spoon the fluff into serving dishes or a large bowl. Garnish with fresh berries on top.
- For a chocolate variation, sift cocoa powder into the cream cheese mixture before folding in the whipped cream and mix gently.
- Chill for at least 15–30 minutes to let it firm slightly, or serve right away if you prefer softer fluff.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. The texture may lighten a bit after chilling; give it a quick stir before serving if it separates. For longer storage, freeze portions for up to one month and thaw overnight in the fridge.
