Ingredients
  

Oatmeal Base
  • 2 cups rolled oats Use old-fashioned rolled oats for best texture.
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon Add more for extra flavor if desired.
  • 1 pinch salt
Wet Ingredients
  • 2 cups almond milk Can substitute with any plant-based or dairy milk.
  • 1/4 cup maple syrup Agave syrup can also be used.
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup blueberries Fresh or frozen blueberries can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, mix the almond milk, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Gently fold in the blueberries.
  6. Pour the mixture into a greased baking dish.
Baking
  1. Bake for about 25-30 minutes, or until the top is golden and set.
  2. Allow to cool slightly before serving. Enjoy warm or refrigerate for meal prep.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze individual servings for up to three months. Avoid quick oats for best texture.
