Preparation
- In a food processor, blend the pitted dates and peanut butter until smooth and creamy.
- Stir in the crushed pretzels, mixing well.
- Line a baking pan with parchment paper and spread the date-peanut butter mixture evenly.
- Place in the freezer for about 30 minutes to set.
Chocolate Coating
- Meanwhile, melt the chocolate chips and coconut oil together in a microwave-safe bowl or over a double boiler.
- Once the date bars are set, remove from the freezer and cut into bars.
- Dip each bar into the melted chocolate to coat and place back on parchment paper.
- Allow to cool until the chocolate hardens, then enjoy!
Notes
Store the bars in an airtight container. They are best kept in the refrigerator for up to two weeks.
