  • 1 cup cooked lean protein (chicken, turkey, or sausage)
  • 1 cup mixed vegetables (spinach, bell peppers, onion)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Olive oil or cooking spray

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk the eggs and season with salt, pepper, garlic powder, and onion powder.
  3. In a large skillet, heat olive oil over medium heat and sauté the mixed vegetables until tender.
  4. Add the cooked lean protein to the skillet and mix with the vegetables.
  5. Pour the egg mixture over the protein and veggies in the skillet.
  6. Cook until the eggs are set, stirring occasionally.
  7. Once cooked, transfer the mix into meal prep containers and let them cool.
  8. Freeze for grab-and-go breakfasts.
  9. To serve, reheat in the microwave for about 2-3 minutes.
