Ingredients
  

Cheese Shells
  • 1 Cup Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Grated Parmesan
Beef Filling
  • 1/2 lb Ground Beef
  • 1/4 Cup Minced Onion
  • 1/2 Tsp Chili Powder
  • 1/2 Tsp Paprika
  • 1 Tsp Cumin
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Salt

Method
 

Preparation
  1. Brown the beef with the minced onion in a pan over medium heat.
  2. In a cup, mix cumin, chili powder, onion powder, garlic powder, and salt with some water.
  3. Pour the spice mixture over the browned beef and let it simmer for 5-10 minutes until the liquid evaporates.
Cheese Shells
  1. In a large mixing bowl, combine cheddar, mozzarella, and parmesan cheeses.
  2. Divide the cheese mixture into 6 equal portions and form balls.
  3. Place the cheese balls on a parchment paper-lined baking sheet.
  4. Bake at 400°F for 6-8 minutes, or until the edges are golden brown.
Assembly
  1. Allow the cheese to cool for 1-2 minutes, then flip them upside down.
  2. Add a spoonful of beef to the edge of each cheese shell and tightly roll into a cigar shape.

Notes

Serve these taquitos hot with keto-friendly sides like sour cream, guacamole, or salsa. Cool leftovers completely before storing in an airtight container for up to 3 days. Re-crisp in the oven or air fryer.
