Ingredients
  

For the Cake
  • 1 cup almond flour
  • 1/2 cup granulated low-carb sweetener Adjust according to sweetness preference
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup unsweetened almond milk
  • Pinch salt
For the Filling
  • 2 cups mixed berries (fresh or frozen) You can use strawberries, blueberries, or raspberries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, sweetener, baking powder, and salt.
  3. In another bowl, mix the melted butter, vanilla extract, and almond milk.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. In a baking dish, spread the mixed berries evenly at the bottom.
Baking
  1. Pour the batter over the berries, spreading it evenly.
  2. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  3. Let it cool slightly before serving warm with a scoop of keto vanilla ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. You can freeze individual slices, wrapped tightly, and thaw in the refrigerator overnight before warming.
