  • 1 head cauliflower, cut into florets
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese plus additional for topping
  • 1/2 cup cream cheese
  • 1/2 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and add the ground beef. Cook until browned and fully cooked. Drain excess fat if necessary.
  3. Add garlic powder, onion powder, salt, and pepper to the beef. Stir to combine.
  4. In a separate pot, bring beef broth to a simmer and add cauliflower florets. Cook until tender, about 8-10 minutes. Drain and return to the pot.
  5. Add cream cheese and shredded cheddar cheese to the cauliflower, stirring until melted and combined.
  6. Mix in the cooked ground beef with the cauliflower mixture.
  7. Transfer the mixture to a baking dish and top with additional cheddar cheese if desired.
  8. Bake in the preheated oven for 15-20 minutes until the cheese is bubbly and golden brown.
  9. Garnish with chopped green onions if using.

Notes

For the creamiest texture, stir the cheeses in the cauliflower pot while it's still hot. If you like spice, add diced jalapeños or red pepper flakes. Ensure you don’t overcook the cauliflower; it should be tender but not mushy.
