  • 1 teaspoon vanilla extract Enhances the flavor profile.
  • 1 tablespoon lemon juice Brightens the flavor.
  • 1 pinch salt Balances sweetness and enhances flavor.

Method
 

Preparation of the crust
  1. In a mixing bowl, combine almond flour, melted butter, and erythritol. Mix until crumbly.
  2. Press the mixture into the bottom of a springform pan to form an even, compact crust.
  3. Refrigerate the crust while preparing the filling.
Preparation of the filling
  1. In another bowl, beat the softened cream cheese until smooth.
  2. Add sour cream, heavy cream, vanilla extract, lemon juice, and salt. Mix until well combined and creamy.
  3. Pour the filling over the crust and smooth the top.
Final Steps
  1. Refrigerate for at least 4 hours or until set.
  2. Slice the cheesecake with a sharp knife dipped in hot water for clean cuts.
  3. Serve chilled.

Notes

Store the cheesecake covered in the refrigerator for up to 5 days. For longer storage, freeze slices tightly wrapped in plastic wrap. Thaw in the refrigerator overnight before serving.
