Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until golden.
- Add the chicken thighs to the skillet and season with salt and pepper. Cook until browned on both sides.
- In a mixing bowl, combine the cream cheese and half of the grated cheddar cheese. Stir until well blended.
- Place the browned chicken thighs in a baking dish. Top with the broccoli and bell peppers.
- Spread the cream cheese mixture over the chicken and veggies.
- Sprinkle the remaining cheddar cheese on top.
Baking
- Bake in the oven for about 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
Serving
- Serve hot and enjoy with a fresh salad or steamed cauliflower rice.
Notes
This dish can be prepared in advance and stored in the fridge. It reheats well in the oven or microwave. For added crunch, consider topping with crushed pork rinds before baking.
