Ingredients

Main Ingredients
  • 1/4 cup chia seeds These seeds expand in liquid, adding fiber and omega-3 fats.
  • 2 cups unsweetened almond milk Use room-temperature for better mixing.
  • 2 tablespoons unsweetened cocoa powder Add a pinch of salt to reduce bitterness.
  • 2 tablespoons sweetener of choice (like erythritol or stevia) Adjust sweetness to taste.
  • 1 teaspoon vanilla extract Adds depth to the flavor.
  • 1 pinch salt Enhances overall flavor.

Method

Preparation
  1. In a mixing bowl, combine chia seeds, almond milk, cocoa powder, sweetener, vanilla extract, and salt.
  2. Stir well until the ingredients are fully combined.
  3. Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb the liquid and thicken.
  4. Stir again to break up any clumps.
  5. Cover and refrigerate for at least 2 hours or overnight.
  6. Serve chilled, optionally topped with berries, nuts, or coconut flakes.

Notes

Store in airtight containers in the refrigerator for 4–5 days. Stir in a little almond milk if it thickens too much. You can freeze the pudding, but the texture may change upon thawing.
