Dough Ingredients
  • 2 cups Almond flour Essential for a low-carb base.
  • 2 teaspoons Baking powder For leavening the dough.
  • 1/4 cup Erythritol or monk fruit sweetener Keto-friendly sugar substitute.
  • 4 oz Cream cheese Melted to maintain texture.
  • 4 oz Butter Melted for richness and flakiness.
  • 3 Large eggs Beaten for binding the ingredients.
Optional Fillings
  • 1/2 cup Cheddar cheese, shredded For a cheesy croissant.
  • 1/2 cup Cooked bacon, chopped Adds savory flavor.
  • 1/2 cup Spinach, cooked and chopped For the spinach and feta option.

Method
 

Preparation
  1. Combine the almond flour, baking powder, and sweetener in a bowl. Mix well.
  2. Melt the cream cheese and butter together until smooth and combine them with the dry ingredients.
  3. Stir in the beaten eggs until a dough forms.
  4. Dust a work surface with almond flour and gently knead the dough.
Shaping and Baking
  1. Roll out the dough into a rectangle and cut into triangles.
  2. Roll the triangles from the base to the point to form croissants.
  3. Place on a baking sheet, brush with an egg wash, and bake at 350°F (175°C) for 15-20 minutes until golden brown.
  4. Let cool slightly before serving.

Notes

These croissants can be filled with various ingredients like cheese, bacon, or vegetables for added flavor. Store leftovers in an airtight container in the fridge for up to 5 days or freeze them for longer storage.
