Ingredients
  

Dry Ingredients
  • cup powdered, sugar-free sweetener 127 g
  • cup Dutch-processed cocoa powder 27 g
  • ½ teaspoon baking soda 3 g
  • ¼ teaspoon salt 1.5 g
Wet Ingredients
  • ½ cup unsweetened creamy peanut butter or your preferred nut/seed butter, 128 g
  • 2 large eggs
Chocolate Chips
  • ¼ cup sugar-free chocolate chips 56 g

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the powdered sweetener, Dutch cocoa, baking soda, and salt until evenly blended.
  3. Add the peanut butter and eggs to the dry mix and stir vigorously until a cohesive, slightly sticky dough forms.
  4. Fold in the sugar-free chocolate chips.
  5. Drop tablespoon-sized mounds onto the prepared sheet, leaving about 3 inches between each.
  6. Wet your fingers and gently press each mound to slightly flatten them.
Baking
  1. Bake for 7–8 minutes. The centers may look a bit soft when pulled out; they'll firm up as they cool.
  2. Let the cookies rest on the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve them slightly warm or let them cool for a fudgier bite. Store cookies in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week. Freeze for up to 3 months.
