Preparation
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, and ground cinnamon.
- In another bowl, whisk together the eggs and melted butter.
- Mix the wet ingredients into the dry ingredients until you form a dough.
- Heat oil in a deep pan over medium heat.
- Transfer the dough to a piping bag fitted with a star nozzle.
Cooking
- Pipe strips of dough into the hot oil, cutting them to your desired length.
- Fry until golden brown and crispy, about 2-3 minutes.
- Remove from oil and let drain on paper towels.
- In a bowl, mix additional erythritol and cinnamon, then roll the churros in the mixture to coat.
- Serve warm and enjoy!
Notes
Serve churros warm for best texture. Optionally offer sugar-free whipped cream or low-carb chocolate dipping sauce on the side. Keep portions small to stay within low-carb goals.
