Ingredients
  

Pancake Batter
  • 1 cup almond flour Base flour for low-carb pancakes
  • 2 large eggs Adds structure to the pancakes
  • 1/4 cup unsweetened cocoa powder Adds chocolate flavor
  • 1/2 teaspoon baking powder For leavening
  • 1/4 cup unsweetened almond milk Wet ingredient for the batter
  • 1 teaspoon vanilla extract For flavor
Filling and Cooking
  • Nutella Nutella (or similar chocolate hazelnut spread) For filling the pancakes
  • as needed Butter or oil For cooking the pancakes

Method
 

Preparation
  1. In a mixing bowl, combine almond flour, eggs, cocoa powder, baking powder, almond milk, and vanilla extract until smooth.
Cooking
  1. Preheat a non-stick skillet over medium heat and add a little butter or oil.
  2. Pour a tablespoon of the pancake batter into the skillet and cook until bubbles form on the surface.
  3. Spoon a small amount of Nutella into the center of the pancake, then cover with another tablespoon of batter.
  4. Flip and cook until golden brown on both sides.
  5. Repeat with the remaining batter.
Serving
  1. Serve warm and enjoy your low-carb pancake poppers!

Notes

These pancake poppers can be served with sugar-free syrup, fresh berries, or whipped cream. Leftovers can be stored in an airtight container in the refrigerator or frozen with parchment paper in between.
