Cooking
- Heat a non-stick skillet over medium heat and grease it lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes on each side or until golden brown.
Pecan Glaze
- In a small saucepan, melt additional butter and combine with chopped pecans until toasted slightly.
- Serve pancakes warm, drizzled with the pecan glaze and topped with sugar-free syrup or whipped cream if desired.
Notes
For best results, use room-temperature ingredients and avoid over-mixing the batter to keep the pancakes fluffy. These can be served as breakfast or a dessert.
