- Fold in the grated zucchini until just incorporated.
Baking
- Pour the mixture into a greased baking dish and smooth the top.
- Bake at 350°F (175°C) for about 25-30 minutes, or until a toothpick inserted comes out clean.
Frosting
- Whip together softened cream cheese, a sweetener of your choice, and vanilla until fluffy.
- Once the bars are cooled, spread the frosting evenly over the top.
Serving
- Cut into bars and enjoy your keto creation!
Notes
Store the bars in an airtight container to retain moisture, layering parchment paper between them.
