  • 2 cups Zucchini, grated Squeeze out excess moisture
  • 1 cup Almond Flour Low-carb alternative to wheat flour
  • 1/2 cup Erythritol or Monk Fruit Sweetener Natural sweetener that doesn't spike blood sugar
  • 3 large Eggs Bind the ingredients
  • 1/2 cup Butter, melted Provides richness and flavor
  • 1 teaspoon Baking Powder To give rise
  • 1/2 teaspoon Baking Soda To assist in leavening
  • 1 teaspoon Vanilla Extract Adds flavor
  • 1 teaspoon Spices (like cinnamon and nutmeg) For added flavor
For the Caramel Cream Cheese Frosting
  • 8 oz Cream Cheese, softened Base for frosting
  • 1/2 cup Erythritol or Monk Fruit Sweetener Adjust to taste
  • 1 teaspoon Vanilla Extract To flavor frosting

Method
 

Preparation
  1. Grate the zucchini and squeeze out excess moisture.
  2. In one bowl, whisk together the almond flour, erythritol, baking powder, baking soda, and spices.
  3. In another bowl, mix the eggs, melted butter, and vanilla until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently.
  5. Fold in the grated zucchini until just incorporated.
Baking
  1. Pour the mixture into a greased baking dish and smooth the top.
  2. Bake at 350°F (175°C) for about 25-30 minutes, or until a toothpick inserted comes out clean.
Frosting
  1. Whip together softened cream cheese, a sweetener of your choice, and vanilla until fluffy.
  2. Once the bars are cooled, spread the frosting evenly over the top.
Serving

Notes

Store the bars in an airtight container to retain moisture, layering parchment paper between them.
