Main Ingredients
  • 1 pound ground chicken Can swap with ground turkey or lean beef.
  • 2 cups cauliflower rice Use fresh or canned; ensure it's drained.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon taco seasoning Use low-sodium if desired.
  • 1 cup diced tomatoes Use no-salt-added for lower sodium.
  • 1/2 cup black beans Rinsed and drained.
  • 1/2 cup corn Canned or frozen works.
  • 1 whole avocado Diced, add fresh when serving.
  • to taste Fresh cilantro For garnish.
  • to serve wedge Lime For squeezing over bowls.

Method
 

Cooking Chicken
  1. In a skillet, heat olive oil over medium heat.
  2. Add ground chicken and taco seasoning, cooking until chicken is fully cooked.
Cooking Cauliflower Rice
  1. In another pan, cook cauliflower rice according to package instructions or sauté until tender.
Assembling the Bowl
  1. Assemble the burrito bowls by placing cauliflower rice at the base.
  2. Top with seasoned ground chicken, diced tomatoes, black beans, corn, and avocado.
  3. Garnish with fresh cilantro and serve with lime wedges.

Notes

For a family-style dinner, place all components in bowls and let each person build their own burrito bowl. Store leftovers separately in airtight containers.
