Ingredients
  

For the Roll-Up
  • 1 piece low carb tortilla wrap (or lettuce leaf) Choose a pliable low carb tortilla to prevent cracking.
  • 1 Tablespoon low carb honey mustard (or garden veggie cream cheese) Thick spreads help keep moisture away from the wrap.
  • 2 oz roasted turkey or other meat Can substitute with sliced ham or roast beef.
  • 1 slice cheese Recommended to place next to turkey for binding.
  • 1/4 cup diced tomatoes Pat tomatoes dry to reduce sogginess.
  • 1/2 cup lettuce Leafy greens should go on top to stay crisp.

Method
 

Assembly
  1. Place the wrap or lettuce leaf on a clean surface or wax paper.
  2. Spread the honey mustard or cream cheese thinly and evenly.
  3. Layer the turkey in a single even row.
  4. Add lettuce and diced tomatoes last.
  5. Place the cheese where it will help everything hold together.
  6. Roll the wrap gently but firmly, tucking as you go to form a neat cylinder.
  7. For cleaner halves, chill the roll for a few minutes, then cut with a sharp knife.

Notes

Store unused roll-ups in an airtight container in the fridge for up to 3 days. Avoid freezing filled roll-ups to maintain texture.
