Preparation
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add garlic and cook for about 30 seconds until fragrant.
- Add heavy cream, parmesan, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes until slightly thickened.
- Stir in sun-dried tomatoes, cherry tomatoes, and spinach until spinach just wilts.
- Place raw shrimp in a baking dish and pour the sauce over them.
- Sprinkle mozzarella cheese on top.
Baking
- Bake for 15–18 minutes until shrimp are pink and cooked through.
- Garnish with fresh basil before serving.
Notes
For the best results, use fresh shrimp for a sweeter taste. Customize with different vegetables like bell peppers or mushrooms if desired.
