  • 1 cup almond butter Choose high-quality almond butter for the best flavor.
  • 1/2 cup erythritol (or another sugar substitute) Erythritol can be replaced with other sugar substitutes.
  • 1 large egg Can be replaced with a flaxseed or chia seed egg for a vegan version.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (sugar-free if desired) You can also mix in chopped nuts or dried fruits.
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the almond butter, erythritol, egg, vanilla extract, baking soda, and salt until smooth.
  3. Fold in the chocolate chips.
  4. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until slightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served warm or at room temperature. They are perfect for school lunches or picnics as they fit easily into containers. Store in an airtight container for up to one week or refrigerate to extend their life. Freeze for up to three months.
