  • 1 cup rolled oats
  • 2 pieces ripe bananas The riper the bananas, the sweeter the cookies.
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup raisins or nuts (optional) Customize according to taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add rolled oats, applesauce, vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
  4. Fold in raisins or nuts if using.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days. For longer storage, refrigerate for about a week or freeze for up to three months. Thaw at room temperature or microwave for a few seconds prior to serving.
